Corn Bread


1 1/2 C yellow cornmeal
1 C flour
1/4 C brown sugar - packed
1 tsp salt
1/2 tsp baking soda
2 eggs
1 C sour cream
1/2 C low fat milk
1/4 C butter - melted

Pour 2 cups of water into the rice cooker and close lid. Press the cook button and bring the water to a boil. Coat a 2-quart baking dish that fits in the inner pot with nonstick cooking spray. In a medium bowl, mix together the dry ingredients. In a separate bowl, whisk the eggs, sour cream and milk together. Add to the dry ingredients, stirring only until moist. Drizzle in the butter, stir slightly, and pour the cornbread batter into the prepared baking dish. Cover the dish with a piece of aluminum foil, but do not crimp the sides. Use a foil pan lifter to open the lid, using caution to avoid steam burns. Using a cooking mitt, place the foil lifter and baking dish into the inner pot. Close the lid and cook until the cornbread is dry on top, about 45 minutes. Using the foil pan lifter, carefully remove the cornbread to a wire rack to cool slightly. Cut cornbread into pieces and serve while warm.

BBQ


BBQ rub:
1/4 C. paprika
2 tbsp. brown sugar, packed
2 tsp. kosher salt
1 tsp. freshly ground black pepper
1 tsp. chili powder
1/2 tsp. crushed red pepper (optional)
1 tsp. dry mustard
1 tsp. garlic powder
1 tsp. onion powder

Damage


So this weekend I think I broke my pinki toe, which lead me to fall and scrape my leg and eat a mouth full of wood chips. Also, we did not get a couch, or tv stand, or tv. I unpacked my glass ware and got my shelves somewhat arranged though.

Cream Cheese Icing

1 pkg cream cheese
1 stick butter
3 cups powdered sugar
Beat together until smooth

This is 8 servings of cream cheese and 8 servings of butter. To burn off the number of calories in one serving of cream cheese you would have to do:
12 minutes of calisthenics
35 minutes playing cards
or spend 32 minutes studying
To burn off the number of calories in one serving of butter you would have to:
Run up and down the stairs for 11 minutes
Lift weights for 33 minutes
or Pop in a cardio DVD for 24 minutes

Good news is that you get two brownies for your efforts!
