Apricot Muffins

1 cup flour
1 ½ tsp. baking powder
¼ tsp. kosher salt
6 Tbsp. butter, room temperature
¼ cup sugar
1 egg
1 tsp. lemon zest
1 tsp. vanilla
1/3 cup milk
2 apricots, halved, pitted and cut in ¼ inch slices
2 Tbsp. raw sugar
