Mushroom Bacon Quiche

1 C. sliced fresh mushrooms
4 slices fully cooked turkey bacon, chopped
1 1/4 C. Egg Beaters® Original
1/2 C. half and half
1/2 C. shredded reduced fat Mexican blend cheese
1 C. chard (boiled down)
1/4 teaspoon ground black pepper

Measure eggs and half & half in large measuring cup. Add remaining ingredients and give it a good stir.
This quiche is made without pie crust.
After preheating oven, spray bottom and sides of 9-inch pie plate with PAM® Original No-stick Cooking Spray. Fill dish with filling. Bake 350* for 45 minutes. I served mine with a few slices of avocado.

644.5 calories, 48 g protein, 12.7 carbs, 3.1 g fiber for the entire pie.
