Carnitas


Pork chops were on sale! Take your (washed and dried) pork slabs and throw them in a casserole dish with some olive oil, 1 sliced onion, and one minced jalapeno (stems, seeds and all), some seasoning salt and black pepper. Cover dish and refrigerate until tomorrow. Sear pork in very hot pan. Remove all food from pan. Scrape off peppers and onions (otherwise they will burn and its too smokey and horrible to breathe burned peppers) and put back in casserole. Slice seared pork into small cubes (trimming fat or bone), then return it to the skillet. Sprinkle cubes with a small amount of taco seasoning, and allow meat to cook all the way through. De-glaze pan with 1/4 C. water so the seasoning is not burning. Add peppers and onions and saute all ingredients together. Serve with tortillas!
